Why Raw Potato Size Matters for Long Fries
Raw material dimensions influence what can be cut from a potato. Large, elongated potatoes give the process more length to work with, but raw-material photos alone do not guarantee the final carton’s length distribution.

Begin with the raw material
A suitable elongated potato can support a higher proportion of long pieces. Size is only one input: trimming, cut width, processing and handling also affect the final product.
Buy to a measurable result
Use the finished-product specification to define the percentage above 75 mm, above 50 mm and below 25 mm. That gives buyer and factory a shared test basis rather than relying on a single promotional image.
